How do I add email addresses to the drop down for the contact us portion of our site?

From the Admin Site Map go to Administration>Configurations>Contact Us. 

If you are only using one email as your Contact Us email, then you can change it on this page.

If you are using multiple emails as your Contact us email contacts, then click on the Add Contacts link. On the Add Contacts page, click the Add Subject button.  You’ll see where to add emails at this point.
